This recipe was inspired by using natural pork; you can use enhanced pork instead, if you so desire. (Enhanced pork is pork that has been injected with a sodium solution). You don't need to do the brining in step one if you're using enhanced pork chops.

There are a few ingredients needed for this recipe, before we get right down to actually baking pork chops. They are: one pound boneless pork chops with fat trimmed, 1/8 teaspoon cayenne pepper, 1/8 teaspoon of ground ginger, 1/8 teaspoon mustard- dry, 1/8 teaspoon pepper, ½ teaspoon dried and crumbled marjoram, 2 tablespoons corn meal, 1/3 cup corn flake crumbs, 2 tablespoons of fat free milk, one egg and vegetable oil spray.

Preheat your oven to 375 degrees. Use your vegetable oil spray and spray – lightly – a shallow baking pan that is large enough to hold your pork chops in a single layer.

In a shallow, small bowl, stir together the milk and egg.

In another shallow dish, like a pie pan, combine your cayenne, ginger, mustard, pepper, marjoram, corn meal and corn flake crumbs.

Using safety tongs, dip your pork chops into the milk mixture, allowing the excess to drip off. Coat both sides of your pork chops with the cornbread and corn flake mixture, and then put your chops in the prepared pan. Now you're ready to try your hand at baking pork chops.

Bake the chops uncovered for fifteen minutes. Then turn the chops. Bake for ten minutes on the other side, or until the chops are slightly pink in the center, and tender.

Another way of baking pork chops is to make easy oven baked barbecued pork chops.

You will need: six pork chops, each 3/4 to one inch thick, one medium onion thinly sliced, 1/4 cup vinegar, 3/4 cup water 1 tablespoon brown sugar or honey, 1 tablespoon Worcestershire sauce, 1/2 cup ketchup, 1 teaspoon salt and 1/4 teaspoon pepper.

Preheat your oven to 350 degrees. Place your chops on the bottom of a 9x13x2 inch baking pan. Then place the sliced onions on the pork chops. Combine the rest of your remaining ingredients; pour the mixture over your pork chops. Bake uncovered for one hour, or until chops are tender.

So, whether you like your pork chops spicy or mild, baking pork chops can be more fun than chore. Try some yourself!
